
“I need some mac & cheeeeeeeeese!” I was at the Foxhead, more than a tad drunk, and all I could do was talk about how much I needed mac & cheese. I didn’t care whether it was vegan or not, I declared. If given the opportunity, I would’ve eaten an entire box of the orange-powdered stuff in one sitting, I’m sure. Luckily, the opportunity didn’t present itself. I did, however, open my e-mail this morning to find a recipe for vegan mac & cheeze forwarded to me by one of my drunken compatriots of last night. It dawned on me that it’s been over four years since I’ve had anything quite like mac & cheese! Dragging my hungover ass down to the co-op wasn’t at the top of my list of things I wanted to do, but I needed some noodles if I was going to pull this off.
So, again, it’s been four years, so maybe my memory is fuzzy, but damn if this doesn’t taste like the real thing! I wasn’t expecting it to—the recipe’s creator, Lauren from VeganYumYum, warned that it wouldn’t be exactly the same, but I sure couldn’t tell the difference! The cheeze sauce is creamy and salty, with just enough of an orange tint to bring back memories of school lunches. Perfect cure for a hangover!
I’m going to try to make a slightly more adult version—a baked casserole style dish—with the leftover sauce tonight for some friends.
